Homemade Yex Tableya 100% Natural Pure Cacao
Yex Tableya by Naturae is homemade from 100% Pure Cacao Beans. No added ingredients. The beans from the cacao fruits were dried, and roasted. After roasting, the shells separate from the cacao beans then the bare beans are ground to produce a cacao liquid paste. This cacao liquid paste is raw, a concentration of cacao solids and cacao butter loaded with antioxidants. It is also rich in minerals such as calcium, copper, sodium, magnesium, iron, zinc, potassium, nitric oxide, and phosphorus.
The main flavanols found in cocoa are epicatechin, catechin, and procyanidins. Procyanidins provide the majority of antioxidant activity in cacao. In addition to polyphenols, cacao contains methylxanthine compounds—predominantly theobromine—about 2% to 3% by weight.
Yex Tableya is a traditional Filipino pure cacao unsweetened dark chocolate solids that are molded and pressed into coin-size tablets a few hours after the grounding process. It is homemade and handcrafted and didn’t go through extensive heating that can potentially damage the important ingredients found in cacao. Yex Tableya (tablets) can be consumed in a few different food and beverage variations. The most popular is the tableya hot and dark chocolate drink popularly called Sikwate by Visayan locals. It is prepared by mixing the cacao tablets into boiling water. This preparation was handed down from the generations of the mesoamerican civilizations. The only difference is, the Mesoamericans in ancient times prepared their chocolate drink concoction with tap water. They drank their chocolate drink at room temperature, not cold, not hot.
When Hernan Cortez, the Spanish conqueror to the Mesoamerican countries, (modern days called northern Costa Rica, Nicaragua, Honduras, El Salvador, Guatemala, Belize, and central to southern Mexico) brought the cacao beans and their recipe to Spain, this is the time when the chocolate drink was prepared with hot water, thus the beginning of hot chocolate.
